Ingredients

  • 1/4 cup finely chopped shallots
  • 1 cup dry white wine
  • Salt, to taste
  • Cayenne pepper, to taste
  • 1/4 cup heavy cream
  • 1 1/2 sticks cold butter, sliced into pieces
  • 1/4 teaspoon hot sauce
  • 1/2 teaspoon Worcestershire sauce
  • 2 tablespoons chopped shallots
  • 1/4 cup capers
  • 1/2 cup diced small tomatoes

Directions

  1. Heat a medium saucepan over medium heat and combine the shallots with white wine. Season with salt and cayenne, then bring to a boil for a rich base.
  2. Reduce heat to medium-low and simmer until the liquid halves, concentrating those vibrant flavors.
  3. Stir in heavy cream and cook for 2 minutes, building silky smoothness.
  4. Off the heat, whisk in cold butter pieces gradually until melted and emulsified into velvety perfection.
  5. Taste and elevate with salt, cayenne, hot sauce, and Worcestershire for a bold, balanced kick.

Inspired by the viral rice paper croissants made famous on TikTok, we took our version of the quasi-pastry in a French direction with a ham-and-Gruyère filling. The foundation is a simple piece of rice paper that’s soaked in beaten egg.
