Cajun Shrimp with Rice

Ingredients
- 1 tablespoon unsalted butter
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 pound large shrimp, peeled and deveined, tails intact
- Kosher salt and freshly ground pepper
- 4 plum tomatoes, chopped
- 2 bunches scallions, chopped
- 3 cups cooked white rice
- 3 tablespoons chopped fresh parsley
- Lemon wedges, for serving (optional)
Instructions
- Warm the butter, olive oil, and minced garlic in a large skillet over medium-high heat until fragrant, about 1 minute. Toss the shrimp with Cajun seasoning and saut, stirring regularly, until the shrimp begins to curl, roughly 1 minute. Season to taste with salt and pepper.
- Add the chopped tomatoes and scallions to the skillet and saut, stirring often, for approximately 1 minute. Stir in the cooked rice along with 1/4 cup water and continue cooking until the rice is heated through and the shrimp turns opaque, about 3 minutes more. Fold in the fresh parsley and serve with lemon wedges if desired.
