Juicy sausage, charred veggies, and cheesy egg omelet bites come together in under 30 minutes for a protein-packed meal that'll have everyone reaching for seconds!
Ingredients
- 2 tablespoons olive oil
- 6 links breakfast sausage, sliced into 1-inch pieces
- 1 small onion, chopped into chunks
- 1 small red bell pepper, cut into chunks
- 1 small green bell pepper, chopped into chunks
- 1 tablespoon Montreal steak seasoning
- 1/3 cup half-and-half
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 6 large eggs
- 2 tablespoons butter
- 1 cup shredded Cheddar cheese
Special equipment: Six 12-inch skewers
Instructions
- Heat olive oil in a large cast-iron pan over medium-high. Add sausage pieces and cook until evenly browned and heated through, about 2-3 minutes. Transfer to a baking sheet with a slotted spoon and cover to keep warm.
- In the same pan, add onion and peppers. Sprinkle with Montreal steak seasoning and saut, stirring occasionally, until slightly charred, 5-7 minutes. Add to the baking sheet with sausage and keep covered.
- Meanwhile, heat a 10-inch nonstick skillet over medium. Whisk half-and-half, salt, pepper, and eggs in a bowl until light and frothy, 20-30 seconds.
- Melt 1 tablespoon butter in the skillet. Pour in half the egg mixture, swirling to spread evenly. Lift edges with a spatula to prevent sticking. When set (45-60 seconds), tilt pan to let uncooked egg flow underneath. Sprinkle with half the cheese; cook untouched 15-20 seconds until done. Transfer to a cutting board. Repeat with remaining butter, eggs, and cheese. Roll omelets into logs and slice each into six 1-inch pieces.
- Thread omelet slices, sausage, onions, and peppers evenly onto six skewers. Serve immediately for a grab-and-go delight that's as delicious as it is convenient!
