Ingredients

  • 3 mangoes, peeled and diced (approximately 2 cups)
  • 2-inch piece of fresh ginger, peeled
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon cumin seeds, toasted and crushed
  • 1/4 cup apple cider vinegar
  • 1 shallot, roasted
  • 1 garlic clove, roasted
  • 1/3 cup olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 pound medium shrimp, peeled and deveined

Instructions

Combine all ingredients in a blender and pulse until roughly combined. Then puree the mixture for about 30 seconds until smooth. Transfer the sauce into a plastic zip-lock bag, add the shrimp, and let it marinate in the refrigerator for 1 hour before cooking.
