- Imagine the irresistible aroma of golden onions caramelizing slowlywarm the canola oil and 1 tablespoon butter in a large sauté pan over medium heat. Once the butter melts, add the onions and cook, stirring occasionally, until they turn a deep, luscious brown, about 25 minutes. Stir in the vinegar, sugar, and 2 tablespoons water, scraping up those flavorful browned bits. Keep cooking until the liquid vanishes, then set the onions aside to await their cheesy destiny.
- Butter up both sides of your bread slices with the softened butter. Lay out 6 slices butter-side down, then pile on 2 slices of Gruyere, a generous spoonful of those heavenly caramelized onions, and top with 2 more slices of Gruyere. Crown with the remaining bread slices, butter-side up, for the ultimate melty sandwich.
- Fire up a cast-iron griddle over medium heat and let the magic happen: place your sandwiches on it, cooking until the cheese oozes and the bread crisps to golden perfection, 2 to 4 minutes per side. Flip, cook until both sides are gorgeously browned and the cheese fully melts, then slice in half and serve immediatelypure comfort that'll have everyone craving seconds!
