Ingredients

  • 2 whole trout (about 1 pound each), cleaned
  • 2 tablespoons canola oil
  • Salt
  • Pepper
  • 1/4 cup fresh orange juice
  • 1/2 cup fresh raspberries
  • 1 tablespoon fresh basil, cut into thin strips

Directions

  • Arrange the trout on a large sheet of aluminum foil.
  • Brush the fish with canola oil, then season both inside and out with salt and pepper.
  • Drizzle the orange juice evenly over the trout, then scatter the raspberries across the fish.
  • Fold the foil to make a tightly closed packet and place it on a preheated grill.
  • Cook for approximately 4 minutes on each side.
  • Remove the packet from the grill and let rest for 5 minutes.
  • Carefully open the foil (watch for steam) and finish with the fresh basil before serving.
