Ingredients
- 2 whole trout (about 1 pound each), cleaned
- 2 tablespoons canola oil
- Salt
- Pepper
- 1/4 cup fresh orange juice
- 1/2 cup fresh raspberries
- 1 tablespoon fresh basil, cut into thin strips
Directions
- Arrange the trout on a large sheet of aluminum foil.
- Brush the fish with canola oil, then season both inside and out with salt and pepper.
- Drizzle the orange juice evenly over the trout, then scatter the raspberries across the fish.
- Fold the foil to make a tightly closed packet and place it on a preheated grill.
- Cook for approximately 4 minutes on each side.
- Remove the packet from the grill and let rest for 5 minutes.
- Carefully open the foil (watch for steam) and finish with the fresh basil before serving.
